Day One, Raw Vegan for a Week, Corn Chowder

Day One of BY’s Vegan for a Week challenge!
My twist on this is to add one raw vegan meal per day. TheĀ menu planner makes adding a raw meal per day super easy, which you can it find through the link below. I have incorporated one or two raw meals per day and also made suggestions for the other ones. These are all fall inspired, just a few seasonal ingredients needed, no excuses not to give it a go.
Add daily one raw meal during our Vegan for a Week challenge to up your energy and health even more! The recipes are all vegan, high carb and low fat.

We are staring today, wednesday, so here is the recipe for this super easy, delicious Raw Corn Chowder.

Raw Corn Chowder

Ingredients for 2 portions,

  • 4 ears of fresh corn, cut off the cob, I saved a 1/4 cup to add on top
  • 2 cups almond milk or 2 cups of water and 4 Tbsp. hemp seeds
  • 1 to 2 tbsp. fresh thyme leaves
  • 1 clove of garlic, optional
  • juice of 1 small lime
  • pink salt to taste

Blend all into a creamy soup. If you prefer a thicker version, use less almond milk. Easy as it can be! Serves 2 or one realy hungry person šŸ˜‰ You can also add a salad or some raw crackers to make it complete.
