Yeah! Day 10 of our Vegan Challenge!
These 10 Days just flew by … I was wondering what to share on day 10. For the past 9 days we had lots of plantbased meals so I thought today would be great to do some goodies which I usualy place in the “extra’s” file plus a delicious dessert to share with your loved ones! Raw desserts are the easiest to share with non vegans and non raws. Everybody loves it …

Chutney
A chutney is a lovely sweet, sour and sometimes spicy sauce which makes a great addition in wraps, sandwiches, veggie burgers or on salads.
Chutney’s can have a fine or a more chunkey texture and are usualy made of a mixture of fruit, fresh or dried, vegetables, spices and herbs.
Ingredients for 1 jar of my Mango Chutney,
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 1/2 cup mango, small cubes
- 1/2 cup white grapefruit segments
- 1 Tbsp. yacun, coconut nectar or any other sweetener of your choice
- 3 dates, pitted and chopped
- 1/2 cup cucumber, small cubes
- 3 Tbsp. cilantro, chopped
- 1 Tsp. grated ginger
- a little piece of cayenne pepper, chopped
- pinch of pink salt
Add all the ingredients to a small blender or foodprocessor and pulse until the desired texture. You can make your chutney very fine or more chunky like mine. It’s all about all the basic flavours in one bite … sweet, sour, bitter, savory, spicy … let me know how it turned out!
Chia Water
This is technicaly not a recipe but hey, it can be simple and wonderful at the same time. I love chia water after or before a workout or yoga class, it fills me up and hydrates perfectly.
Mother Nature’s Gatorade full of nutrients, filling and light on the digestion. Plus it is so gorgeous …
Ingredients for 1 glass,
- 1 cup of fresh coconut water
- 1 and 1/2 Tbsp. chia seeds
Mix, stir a few times in the first 5 minutes and let it thicken for 30 minutes. Stir or shake and enjoy. Just what your body needs to refuel and rehydrate after a sweaty Ali class we all just LOVE!
Red Smoothie Pops
My kids love these! They can have as many as they like, always a plus in their eyes, ha ha!
Blend any fruit you or your kids love, try not to add water, this will make it icy and freeze it. Delicious on a warm summer day, for big and small.
I have to add a an indulgent dessert ….
Vanilla Panna Cotta
Raw desserts can be high on fat and be pretty indulgent sometimes but they are also rich in wholesome ingredients, nutrients and healthier fats. It should and can be enjoyed as a wonderful treat!
Ingredients for 6 to 8 portions,
- 3 cups cashews, soaked for 2 hours, rinsed
- 1/2 cup young coconut meat
- 2 cups almond milk
- 1/2 cup liquid sweetener or stevia or a blend of the two, to taste, you can also sweeten with date paste, this will make the panna cotta darker
- 1/4 cup coconut oil, melted
- 1 Tbsp. vanilla extract
- 1 vanilla bean, scraped, extra flavour and for the pretty black spots
- 1 Tbsp. lemon juice
- pinch of pink or sea salt
Blend all the ingredients except the oil until very smooth then add the melted coconut oil. Don’t overblend with the oil. Taste for sweetness and flavour. Pour into cold molds and let it set for a few hours.
You can add fresh figs or with a drizzle of raw blended fruit jam.
