Pimp up your veggies! Low fat raw vegan dressings & dips to inspire you …
Dressing and dips do make or break a salad … I love my greens, I realy do, but I love them even more with a nice thick dressing. I have to be honest, I need lots of dip, not just one or two tablespoons. And it also has to be low fat, raw or high raw and delicious …
I would love to share a few of my favorites so far with you!
On a low fat diet we need to strech the fat and bulk it up to make the most of it. Half a small avocado or a tbsp. of nut butter can be gone in one or two bites or it can form the base for a generous portion of creamy dressing or dip.
We need a base, some fat, something sweet, something sour and something salty. Or you can go all sweet without fat, that would be a great dressing for some leafy greens.
The base is the bulk of the dressing or dip, which is the same with more or less liquid added. This can be something salty like celery hearts, milder flavour then the dark green ones. Zucchini, cauliflower, fresh corn or carrots can all be used as a base.
The fat, a little goes a long way when making dressing like this. I love to use tahini, avocado, hemp seeds, chia seeds or fresh young coconut. Pine nuts, walnuts, almond butter are also delicious.
Than something sour like lemon or lime juice or apple cider vinegar. The saltyness comes from the veggies like celery, also dried seeweed like dulse or wakame add nutrients and a salty flavour. You can also use a pinch of himalaya or celtic sea salt if desired. Herbs, fresh or dried, chili pepper, garlic, spring onion … so many options. Sweetness, coconut water, dates, raisins or dried apricots all add a touch of sweet to make the dressing well balanced.
Sweet Carrot Dip
Ingredients for 1 generous portion, you can of course share, I prefer to make more lol,
- 1 cup grated carrot
- juice of 1/2 lemon
- 1/4 to 1/2 cup of water
- 1/2 cup soft dried apricots, chopped or raisins
- 2 tbsp. fresh tyme leaves
- 2 tbsp. hemp seeds
- pink salt to taste, optional
Add carrot, raisins or apricots, water, start with less if you want a thicker dressing, and hemp seeds and blend until creamy. Add the herbs and pulse a few times.
Zucchini Mustard Dressing
Ingredients for 1 big portion,
- 1 medium size zucchini, I had a yellow one, you can peel a green one to make the dressing lighter in color
- 2 celery sticks, sliced
- 1 sweet potato, steamed, I used a white one, to keep it raw you can use some extra zucchini
- 3 to 4 regular sized dates, pitted
- 1/2 tbsp. mustard seeds
- 2 tbsp. hemp seeds
- 1 lime, peeled
- handful fresh basil
- 1/4 cup water, if you want it thinner, add a little more water
- pink salt to taste, optional
Blend everything except the basil leaves, I like to pulse those at the end to keep some green spots in the dressing.
This gorgeous yellowish color is due to the yellow zucchini, if you peel your green zucchini it will be more white.
This Green Dill Dressing is so delicious …. fresh dill makes everything good, right!?
Ingredients for 1 generous portion,
- 1/2 zucchini, cubed
- 1/2 cup green peas, raw or steamed
- 1/2 lemon, peeled
- 1 tbsp. nutritional yeast, optional, not raw
- 1 clove of garlic
- handful baby spinach
- 2 tbsp. fresh dill, chopped
- 2 to 4 tbsp. water
- pink salt to taste, optional
Blend until smooth and creamy.
My Basic Raw Low Fat Dressing Recipe,
most of the time I choose
- 1/2 large zucchini or 1 cup chopped celery
- 2 tbsp. hemp seeds or 1 and 1/2 tbsp. tahini or 1/2 avocado
- 1 lime, peeled
- 2 to 3 dates
- 2 to 4 tbsp. water
- fresh herbs, dried herbs, smoked paprika, black pepper, pink salt to taste
Look how wonderful creamy and scoopable it is! And you can have it all ….
Fat Free Sweet Chili Dressing
This one is fat free so it can be combined with a fruity leafy greens as well as with a chopped veggies salad.
- 3 medjool dates
- 1/2 cup chopped red bell pepper
- 1/2 cup of water
- juice of 1 lemon
- 2 tsp. apple cider vinegar
- 1 small red hot pepper, deseeded
- 1 clove of garlic
- 1 tsp. fresh ginger
- 1/2 to 1 tsp. dried chili pepper flakes
- 1/4 to 1/2 tsp. pink or grey salt, optional
Blend until very smooth. You can adjust the sweetness, salt and hotness to taste 😉
