Easy Vegan Swirl Pumpkin Chocolate Blondies Recipe

If you are looking for a super easy blender recipe for vegan blondies I got a yummy recipe for you.

They are vegan and pretty healthy. They are low in fat, loaded with good carbs and some protein. I think of them as fudgy blondies or as Clif Bars meets blondies Recipe.

Pumpkin Blondies Ingredients:

1 can of pumpkin or 1 lb of steamed pumpkin

1 can of garbanzo or great northern beans or 1 pound of cooked beans

1 /3 cup of coconut sugar or whatever sweetener you prefer to use.

a pinch of stevia optional

1 tsp of pumpkin pie or cinnamon spice

vanilla

1/3 cup of nut milk  (if you add more milk you can add 1 tsp of cornstarch. I didn’t)

2 big tbsp of peanut or almond or coconut butter

1 tsp baking powder

Blend and Pour into a Large Dish.

A tip – keep them pretty thin otherwise they will take quite a while to bake. I liked the deep dish ones I made but if you keep them an inch deep they will cook faster and will be on the dryer side for storage. I did like them less dry and more moist as shown in the photo so it is really a matter of taste preferences.

If you decide to do a swirl layer here are the ingredients for the chocolate swirl:

1/2 cup old-fashioned or quick oats

1/4 cup or so of chocolate chips or chocolate pieces

1-2 tbsp of dark cocoa powder

a good pinch or two of salt

1/3 cup or more of sugar (I used dark molasses sugar that is to die for)

stevia optional

1 banana (optional but I did use it)

3 tbsp coconut flakes (optional but a nice fat source)

1/2 tsp baking soda

Blend and pour on top. Give it a small swirl so the layers of orange and drown are distinct.

 

Bake in a 400-degree preheated oven for 30-60 minutes (depends on how deep you dish is). Test them with a knife. If it comes out clean they are done. I took mine out before my knife came out clean and by morning they were pretty dry yet moist if you know what I mean 🙂

That is it. They are ultra easy to make. Its a one blender recipe really. Foolproof.
