A Simple Healthy Dip Dressing Recipe

I have been loving very simple foods with a minimal ingredient list.

This dip is a perfect example of a very simple dip or dressing for an even simpler meal yet I get so satisfied by the simplicity of it.

Celery Dip:

  1.  One or two celery hearts
  2. 1/4- 1/2 block of Tofu
  3. A glass or so of almond milk
  4. A clove of garlic

Now I do use a LOT OF aleppo pepper to top it all off. The aleppo pepper is a salt substitute for me – very mildly spicy and full of flavor. Its flavor profile is sweet, salty, oily and very very full of flavor.

I poured that dressing/ dip over steamed spaghetti squash with eggplant and this was my dinner.

Oh and do not forget to roast the spaghetti squash seeds. They are amazing!!!  The health benefits of pumpkin seeds are also countless. roasted-pumpkin-seeds

As for the no salt diet- I find it to be easy to do once I have adjusted to adding no salt to my meals and I get plenty of good quality sodium from celery, seaweed, chard, tomatoes, etc- all veggies naturally high in sodium. The pay off is having zero bloating, puffiness or water retention, a feeling of lightness and a true experience of flavor.

A FEW WORDS ON BEING SUCCESSFUL ONA  HEALTHY WHOLE PLANTS VEGAN DIET.

Give yourself time in order to learn to appreciate the true flavors of food. Gradually simplify your meals and you will find that this approach leads to greater satiety and actual true cravings rather than food addictions.

Learn to experience the flavors of seasonal fruits just by themselves. I promise, your palette will adjust to the new flavors and you will find greater excitement and joy in a simple seasonal meal such as watermelon either by itself or with passionfruit or with chipotle than you would in a fancy baked rich gourmet dessert.

Shifting to a new diet takes time but there is no greater satisfaction than knowing that you are being kind to your body, to the environment and to the animals that are being saved by us going vegan. It is the greatest gift you can give to your own soul 🙂

    I joined the VIP membership last month but have no idea who to contact for support as I can’t find a support email or number anywhere. I tried replying to the confirmation email I received right after I joined, but this came back as undeliverable.
